What wine goes with prawns and chorizo? Adelaide Hills Pinot Gris for the win

Here's a fabulous combination for you to enjoy on a balmy evening.

Ask any wine lover what white to serve with prawns and you'll get a dozen answers — Sauvignon Blanc, Riesling, even a light rosé. But spend a little time in the Adelaide Hills and the answer becomes obvious: Pinot Gris. Crisp, textured, and genuinely food-friendly, a good Adelaide Hills Pinot Gris is one of the most versatile food wines going. I've paired ours with grilled prawns, smoky Spanish chorizo, nutty chickpeas, and freekeh — and the result honestly surprised me. Here's exactly what I did, and why it works.

My 2024 Adelaide Hills Pinot Gris was sourced from a renowned vineyard in the Woodside region.  Blush magenta when harvested, the pristine fruit was picked in the crisp early morning and quickly transported to the winery for pressing.  Only the free-run juice was fermented in a chilled stainless steel tank to preserve the crunchy acidity and delicate aromatics.  Following a short period of maturation on yeast lees, the wine was racked and filtered for bottling.  The result is a classic example of this variety - not to mention proof why it is so popular the world over.

Super simple to prepare, not to mention mouthwateringly delicious and pretty healthy to boot, try this recipe at home - of course with a chilled bottle of Pinot Gris

Greet the warmer evenings with this classic combo.  It could be a mid week indulgence, dinner party with friends or a Sunday afternoon poolside session.

FAQs

Why does Pinot Gris work with seafood and chorizo? The natural acidity in Pinot Gris cuts cleanly through the richness of chorizo oils, while the textured, slightly fuller body of an Adelaide Hills style stands up to the chickpeas and freekeh without getting lost.

What temperature should I serve Pinot Gris? Slightly chilled — around 10–12°C. Cold enough to be refreshing, warm enough to show its texture.
