Small crops meant the fruit was wonderfully concentrated, and it ripened slowly in the autumnal sunshine — exactly the kind of season that gives you intense flavour without losing freshness.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\"\u003eIn the winery I kept it gentle and traditional. The fruit was completely destemmed, then the whole berries went into open fermenters with daily pump overs to coax out all those gorgeous aromatics. From there it was basket pressed straight to seasoned French oak hogsheads, where it rested for 12 months.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\"\u003eThe result is a cracking example of modern Aussie Shiraz — generous and mouth-filling, with dark berries, a little twist of pepper and a smooth, savoury finish. But thanks to those cool Adelaide Hills nights, it never tips over into heavy.
