A blend for the ages!
This is a 2025 Shiraz Grenache Mataro — SGM for short — from old vines in McLaren Vale. It's the same blend they've been making for generations just north of the Rhône Valley in France, and you can taste why it's stuck around that long.
I've made it the old-fashioned way. Open fermenters, manual pump overs by hand twice a day, then 12 months resting in seasoned French oak hogsheads. No shortcuts, just time and attention.
The result is generous and layered — dark fruit, a savoury earthiness and gentle spice, all wrapped up with a soft, warming finish. This is exactly what I want in my glass when it's cold outside and the fire's going.

Where & When: This wine was made for a proper cassoulet. Think white beans, duck, pork and sausage, slow-cooked until everything falls apart — that classic dish from the south of France, not far from where this blend calls home. If you don't feel like cooking all day, a simple lamb shoulder braise will do the trick too.
I've only got a small parcel of this one, so don't leave it too long.
